The grapes from our vineyards are harvested from the second half of September until the first ten days of October. The duration of fermentation and maceration, which takes place at a controlled temperature of 26-30 ° C, in steel tanks, is about 15-25 days with intense pumpover and delestage in the first days which become shorter and softer towards the end. Continuous tastings establish the moment of racking. After some scheduled decanting, the wine performs the malolactic fermentation in steel tanks.
In oak barrels of various essence and capacity. Before being sold, it is refined in the bottle.
