Fermentation
The grapes from our vineyards are harvested from the second half of August until the first ten days of September. Fermentation lasts approximately 10 days in stainless steel tanks, followed by a second fermentation in the bottle.

The wine ages for almost two years in the bottle before disgorging.

Tasting Notes
Clear and fine color. Its aromas and flavor are both fresh and elegant, with notes of pear and yeasty sweetness, along with well-integrated spicy notes. On the palate, it is light, fresh, and pleasant, with a lively perlage and just the right amount of acidity.
Pairings
Fish-based dishes, but also meat dishes with fatty components (e.g. mortadella) and fresh cheeses.
